Approximately one in four Australians are vitamin D deficient, rising to one in three during winter months. Vitamin D is essential for bone health, energy levels, immunity, mental health and blood sugar regulation, with deficiency symptoms including frequent illness, fatigue, depression, muscle weakness and poor bone health. Foods rich in vitamin D include mushrooms (400 IU per cup), cooked trout (645 IU per 100g), cooked salmon (570 IU per 100g), eggs (40 IU each), fortified milk (100-130 IU) and tinned tuna (270 IU), with recommended daily intake being 600 international units for adults and 800 for older adults.
